Mark did pork loin Wednesday night and last night was kapusta casserole - yum! Tonight we are going to this new place in Spencerport called "Taste of Texas BBQ". I guess it's supposed to be really good pulled pork and ribs. =D>

Awe!
I didn't end up cooking, by the time i got home I could barely keep my eyes open. I laid on the couch till crsh got home, then we ordered pizza and wings. I should have done laundry last night, but didn't, so I have extra to get done tonight and tomorrow morning :-| Sigh

Typically chicken breasts are used, and they are often beaten so that they are tender. In one variant of the recipe, a sharp knife is used to create a pocket in the chicken breasts for the filling. In both cases, the chicken is secured with toothpicks to ensure that the filling does not leak as it cooks.
The filling of chicken Kiev is made with seasoned butter. As a general rule, approximately two tablespoons are used for each chicken breast being prepared. I buy them frozen actually at Aldi's. They have Keiv, Cheese n Broccoli and Cordon Bleu and they are $0.99 each :-) It's actually one of the cheaper meals I can make :-)
